Dominus Estate produces wines that reflect the purity, complexity and character of grapes grown exclusively from the Napanook vineyard. This unique provenance qualifies its wines as estate-bottled, a rarely found designation. The character of a wine is defined by the grapes at harvest. Given the team's extensive efforts in the vineyard, the winemaking practice is minimalist:
- Thorough cluster sorting by hand
- Optical sorting of berries
- Gentle pump-overs delicately extract aromas, color, tannin, and reveal the personality of each lot
- Hand-racking barrel to barrel every three months using the esquive
Only 20% to 40% new French oak barrels are used in order to limit the extraction of oak notes.
